Chocolate-Chocolate Cupcakes

I made these chocolate cupcakes for my cousin, who is visiting us in Bangalore for a few days. He is my kid brother and we grew up together in the same house :) and that means that we had our days of fighting over television ( he would even hide the remote), running to the fridge to get the last piece of chocolate, coming up with excuses of not going to school, doing endless trips to Dollops ice-cream parlour to get our favorite ice cream after school, playing gully cricket with silly rules and many more memorable times together....

And now we are all grown up living in different cities, but this time it was special as we celebrated Rakhi together and re-lived some of the old times :) and this time around we shared the cupcakes without fighting but had the same old grin watching each other finish the cupcakes faster than the other :)

Chocolate Chocolate Cupcakes 
adapted from Dorie Greenspan - From my home to yours

1 cup all-purpose flour
1/4 cup cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
100 grams unsalted butter, at room temperature
3/4 cup sugar
1 egg + 1 egg yolk
1/2 teaspoon vanilla extract
1/2 cup buttermilk
50 grams chocolate chips

For Glaze
75 grams chocolate chips
1 tablespoon icing sugar
2 tablespoons butter
1 table spoon cream (Amul)

To make Cupcakes
  • Preheat the oven to 175ÂșC and grease cupcakes pan
  • Sieve together the flour, baking powder, baking soda, cocoa and salt and keep aside
  • In a large bowl, cream butter and sugar using an electric mixer for 2 minutes

  • Add the eggs one at a time, beating well after each addition

  • Beat in the vanilla extract

  • Reduce the mixture speed to low or switch to a whisk or spatula and alternately add the flour mixture and buttermilk (begin and end with dry ingredients)

  • Add the melted chocolate to the batter and mix well 

  • Divide the batter evenly among the muffin molds 

  • Bake for 20 minutes or until the tops of the cakes are dry and a knife inserted onto the centers comes out clean
  • Let the cupcakes cool for 5 minutes before taking them out of the mold

To make Glaze

  • Melt chocolate in a microwave safe bowl and let is stand for 5 minutes
  • Add in butter, icing sugar and cream and stir well using a spatula
  • Ice the cupcakes and decorate with sprinkles
The cupcakes turned out to be sinful with rich and crumbly flavour :) and i recommend you give this recipe a try :)
