Lasagna with Roasted Vegetables and Spinach

After much procrastination, I finally got around to making Lasagna. Roasted Vegetables in a light tomato sauce is the first layer and all time favourite combination of spinach with cottage cheese (Palak - Paneer) is the second layer. I used no-boil lasagna sheets which made my job even more easy, i didn't have to worry about the lasagna turning soggy and it does not require a lot of time. You can just prepare the sauce with your favourite vegetables and start layering up the lasagna. 

Lasagna with Roasted Vegetables and Spinach
1 packet of no-boil lasagna sheets
1/2 cup grated cheese ( I used Parmesan but think that combination of Parmesan that Mozzarella would do justice to this recipe) 

Tomato Sauce
2 table spoon olive oil
1 onion, finely chopped
5-6 cloves of garlic, finely chopped
5 medium size tomatoes, de-skinned and pureed
Fresh oregano and thyme - few sprigs
Red Chilly Flakes
Salt to taste

Roasted Vegetables
1 Zucchini, sliced into 4
1 red bell pepper, diced
1 yellow bell pepper, diced
2 table spoon olive oil

Spinach Layer
200 grams paneer or cottage cheese, grated
1 cup boiled spinach, finely chopped
salt to taste
1/2 teaspoon grounded pepper
  • Line a baking tray with aluminium foil and place the vegetable to be roasted in the tray. Drizzle the olive oil on the veggies and allow them to broil in the oven for 15-20 minutes  

  •  In the meanwhile, heat olive oil in a pan and saute onions and garlic till light pink in color. Add pureed tomatoes, herbs, salt and chilly flakes and allow to cook for 3-4 minutes
  • Once sauce starts boiling add the roasted vegetables (cut into smaller pieces) to the sauce and cook for some more time. Add some water if the sauce becomes too thick
  • In a seperate bowl, mix the spinach, grated paneer, salt and pepper and keep aside
  • In a heat proof baking dish, start layering up the lasagna by coating the bottom of baking dish with the tomato sauce and place two lasagna sheets on top of that. Spread the spinach and cottage cheese mix on top of the lasagna sheets to form a thin layer and sprinkle some grated cheese before covering with layer of two more lasagna sheets. Add a layer of tomato sauce and sprinkle some cheese and cover with 2 more lasagna sheets. Spread the remaining tomato sauce on the top most layer and sprinkle the cheese ( I made two layers, but you can add more layers) Remember that top most layer is tomato and cheese

  • Pre-heat the oven to 170°C and bake the lasagna for 40-45 minutes (cover the lasagna with aluminium foil). Remove the foil toward the last 5 minutes so that the cheese on top melts. Serve hot :)

    1. thanks for reminding me that it has been ages Mervin....Strawberry short cake will have to wait till strawberries hitthe shelves...few more days i guess. Planning to make the chocolate shots you suggested soon though!
