Mango Cheese Cake


Finally the fruit i have been eagerly waiting for is in season :) yes, its the KING of fruits - Mango! I simply love mangoes and my eyes brighten up with the thought of eating them. May be its the memories associated with this fruit which makes it so special. It takes me back to my childhood when during summer holidays all the kids would sit down in the veranda and dadi (grand mother) would cut mangoes for all of us and how there would be a fight for the last piece, even the guthli (the mango seed), or when daddy would serve glass full of aamras (mango milk shake) after dinner or the preparation of creamy mango shrikhand (yoghurt) spiced with cardamom when we had guests at home. I guess mangoes and good times go hand in hand :)
I was browsing the internet and came across this poem which totally describes my feeling. Here is a excerpt from the poem:

My hammock sways in tune

with the dancing branches

Mango dreams fill my heart

reminders of childhood joys

the swings, the luscious fruits

licking the dripping juice

flowing along the tiny bare arms.


Mango Cheese Cake

For the Cheese Cake:

 I followed this versatile cheese cake  recipe

For the Glaze

4 ripe mangoes
2 tablsepoon sugar
Candied fruits / sliced Pistachios

  • Take two mangoes and slice them into long wedges and keep aside
  • Puree the remaining two mangoes along with sugar using a blender until smooth
  • Press the puree through a sieve and discard any pulp remaining in the sieve
  • Pour the puree on the cheese cake and decorate with mango slices and candied fruits
  • Chill in the refrigerator and let it set
I made this cake when i was visiting my hometown Jaipur and it turned out really nice, not very sweet though creamy and fresh with goodness of mangoes. I used the "Safeda" mango which is the first mango that hits the market followed by Alphonso and my favorite of all "Langda". Everyone in the family relished the cheese cake and was surprised when they got to know its made using curd. Another great trip and more mango memories to cherish :)
