Chocolate Muffins

I made these wonderful chocolate muffins when I was going to meet my cousin and sister-in-law whom i was meeting after a really long time. Both of them love chocolate and i thought these would be a really nice accompaniment with a cup of coffee :).

The recipe is from the famous Humming Bird Bakery in London. Its a simple recipe, as it requires no exotic ingredients and took me ~ two minutes to put together all the ingredients on the kitchen slab. You will also see that this recipe is different from a typical cake method in its order of mixing ingredients. Unlike cakes which require creaming butter and sugar together, for these muffins butter is melted and added at the end of all the mixing.

The recipe makes ~ 30 small sized muffins in the tray i am using but should yield ~ a dozen if using a bigger muffin case.

Chocolate Muffins

Muffin tray
Hand Blender


2 eggs
1 cup powdered sugar
1 cup flour or Maida
6 tablespoons cocoa powder (i used Hershey's)
2 teaspoons baking powder
pinch of salt
2/3 cup milk (i used low fat milk)
1/2 teaspoon pure vanilla extract (i used essence as i ran out of extract)
1/2 cup + 3 tablepoons unsalted butter melted
4 oz or 110 grams milk chocolate or semi-sweet chocolate chips (i chopped chocolate into small pieces)

  • Preheat the oven to 350°F/175°C
  • Sieve together flour, cocoa, baking powder and salt a few times so that all the dry ingredients mix together properly and keep aside
  • In a bowl, cream together sugar and eggs for about 2-3 minutes using a hand mixer. Once mixed properly, add the vanilla 
  • Add flour mix and milk in 3 alternate batches. Mix properly after each addition using a whisk
  • Stir in the melted butter and fold in the chopped chocolate pieces

  • Spoon the batter into the muffin tray lined with paper liners and bake for about 15-20 minutes or when the toothpick inserted in the center comes out clean
